Chocolate Meringues
Great for snacking, I promise!
Notes
I love making these with a chopped bar of baking chocolate, but you could easily use mini chocolate chips instead. You could also leave out the chocolate pieces entirely if you prefer.
I used a small baking scoop to spoon these onto my baking sheet, but using a bag to pipe the meringues onto the sheet will work just as well.
Store these in an airtight container.
Ingredients
Yield: 2 dozen
2 egg whites
½ cup Sugar
1 ½ tsp Vanilla Extract
3 tbsp cocoa powder
4oz bar Semi-Sweet Chocolate
Instructions
Preheat the oven to 250 degrees. Line a large baking sheet with parchment paper.
Roughly chop the semi-sweet chocolate and set aside. Pieces should be small, but irregular.
Add egg whites to the bowl of an electric mixer. Whisk on high speed until stiff peaks form.
Beat in sugar a little at a time.
Beat in vanilla extract.
On low speed, beat in the cocoa powder.
Turn off the mixer. Gently fold chopped semi-sweet chocolate into the mixture with a rubber spatula.
Using a small spoon, or small scoop, drop the mixture onto the lined baking sheet. Space the meringues ½ inch apart.
Bake meringues for one hour.
Turn off the oven and let the meringues dry for two hours.
