Mini Chocolate Chip Cookies
Good things come in small packages.
Notes
You can absolutely make these cookies larger. I just think mini cookies are fun!
These are great to serve at parties or to give as gifts.
My mom dislikes cinnamon so she leaves it out! Do as you please.
Ingredients
Yield: 4 dozen
2 ½ cups All Purpose Flour
1 tsp Cinnamon
1 tsp Baking Powder
1 ½ tsp Baking Soda
1 tsp Salt
1 cup Unsalted Butter (softened)
½ cup White Sugar
⅔ cup Brown Sugar
1 ½ tsp Vanilla Extract
2 Eggs
1 cup Semi Sweet Mini Chocolate Chips
Instructions
Preheat the oven to 350 degrees. Line baking sheets with parchment paper.
In a medium bowl add flour, cinnamon, baking powder, baking soda, and salt. Whisk together until combined.
In the bowl of a stand mixer cream together butter, sugar, brown sugar, and vanilla until fluffy.
Add eggs to the butter mixture one at a time, beating well after each addition.
Beat in vanilla extract.
Add flour mixture to the butter mixture slowly.
Gently fold in the mini chocolate chips.
Using a 1 tbsp cookie scoop, scoop chilled dough onto the baking sheet. You may also use your hands to pinch and roll dough into balls if you do not have a cookie scoop
Bake for 12-15 minutes, or until edges are set.
