Glazed Lemon Cookies
When life gives you lemons, make cookies.
These lemon cookies are my absolute favorite to make. They’re also quite popular with my family when I make them for get-togethers or holidays. The soft buttery texture took me a while to get right. Please enjoy!
Notes
I always make these cookies with the glaze, but you do not have to.
I wrote the glaze recipe to the thickness I prefer. If you’d like a thicker lemon glaze, simply add more powdered sugar to the recipe.
Sometimes I wind up with extra lemon juice while making these. Try using it to make yourself a refreshing glass of lemonade if you have enough to spare!
Glazing the cookies can get super messy. I suggest placing the cookies back on the lined cookie sheet once everything is cooled. If you drizzle the glaze over the parchment paper it’s much easier to cleanup afterwards.
Ingredients
Yield: 2 dozen
Cookies:
3 Lemons (zested and juiced)
2 ½ Cup All Purpose Flour
½ tsp Baking Soda
½ tsp Salt
1 cup Butter (softened)
¾ cup Sugar
2 tbsp Lemon Zest
2 ½ tbsp Lemon Juice
1 tsp Vanilla Extract
1 egg
Glaze:
1 tbsp Butter
¼ cup Milk
2 cups Powdered Sugar
½ tsp Vanilla Extract
3 tsp Lemon Juice
1 tbsp Lemon Zest
Instructions
Preheat the oven to 325 degrees. Line cookie sheet with parchment paper.
Zest and Juice three lemons. Set zest and juice aside.
In a medium bowl add flour, salt, baking soda, and lemon zest. Whisk together.
In the bowl of a stand mixer, beat softened butter until fluffy.
Scrape down the sides of the mixing bowl with a rubber spatula. Add sugar, vanilla, and lemon juice. Beat until creamy.
Add egg and beat well.
Add dry ingredients slowly.
Using 1 ½ tsbp cookie scoop, scoop dough onto prepared cookie sheet.
Bake for 12-15 minutes, or until the edges of the cookies are set.
For the Glaze
Add butter and milk to a microwave safe bowl. Microwave until the butter is melted.
Add powdered sugar to the milk and butter mixture. Whisk together until combined. For best results, sift your powdered sugar.
Add vanilla, lemon juice, and lemon zest. Whisk until combined.
Let cool and drizzle over cooled lemon cookies.
